Cold Weather in NYC Calls for Soup

It's getting chilly outside, and in the culinary world that can only mean one thing. It's time for soup! We look forward to soup season every year and wish it were more socially acceptable to serve up the comfort food during each season. And yes, we know about gazpacho, it's just not quite the same. Anyway, here are a few great soup recipes that are sure to please even the pickiest eater. 

  • Quick Mushroom Barley Soup — This is a hearty, rustic, and incredibly easy soup to make. Most of the ingredients are likely already in your pantry, and everything is whipped up in 30 minutes. We will say that using fresh, quality mushrooms makes all the difference in the world.

  • Pumpkin Apple Soup — Time for something seasonal and special. A fun twist on butternut squash soup, this remix uses canned pumpkin, sausage, and tart apples to create a unique blend of smooth flavors.

  • Kadhi — This one is fancy and seemingly complicated, but deceptively simple to make. It is simply a spiced yogurt soup, and made incredibly creamy without any cream. The resulting dish is astonishingly complex, and perfect served over a bed of white rice.

  • Classic Chicken Noodle — I mean, we had to. Learn how to whip up this iconic soup yourself with whole chicken, carrots, celery, garlic, and onions. You really don't need much else. Grandma would be proud of this one. You don't have to rely on a can or package ever again.

  • Golden Broccoli Soup — We love a good broccoli soup, and this one is vegan! Made with vegetable broth, turmeric, and cashews to create a smooth texture. This one packs a bit of heat if you do it right.

  • Celeriac, Hazelnut and Truffle Soup — She's fancy. This beautiful soup is potato based and uses a garnish of truffle oil to really make things luxurious. The blanched hazelnut also creates a rich and balanced flavor that's utterly addictive.

  • Hearty Navy Bean Soup— A pantry classic, this soup is ready to go with just about five ingredients. Though you do need to give the beans time to soak, it's pretty much impossible to mess this one up. Plus, it has ham.

  • Roasted Red Pepper, Tomato, and Lentil — Another vegan-friendly favorite. This smooth and filling soup is made vibrant with the roasted red peppers and elevated with the tang of fresh tomato. We recommend serving with crunchy bread.

  • Hamburger Soup — To please the child in all of us. This soup is incredibly easy to put together and uses very few ingredients. Most of them you probably already have lying around. It's also very filling. If you wanted to melt cheddar cheese on top as a yummy garnish, we wouldn't disapprove.
